Method
Preheat the oven to 400 °F.
Grease a muffin tin with coconut oil spray.
In a medium bowl, combine oat or barley flour, baking powder, baking soda, salt, cinnamon, ground fennel, and cardamom.
In another bowl, beat the egg, then add brown rice syrup and mix until well blended.
Incorporate orange zest, orange juice, coconut oil, vanilla, applesauce, zucchini, carob chips, apple, and sunflower seeds into the wet mixture.
Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
