Ingredients

  • 1⁄2 cup of pumpkin seeds
  • 1 cup of shredded toasted coconut (see instructions below)
  • 2 tablespoons of chia seeds
  • 1⁄2 tablespoon of ground cardamom
  • 1⁄2 tablespoon of ground cinnamon
  • 1 tablespoon of raw honey or molasses
  • 1⁄4 teaspoon of salt
  • 1⁄4 cup of coconut oil
  • Toasted pumpkin seeds (pepitas), for garnish

Method

Step 1

In a blender, combine pumpkin seeds, shredded coconut, chia seeds, cardamom, cinnamon, honey (or molasses), salt, and coconut oil. Blend until well combined.

Step 2

Form the mixture into small balls and roll them in toasted pumpkin seeds (pepitas) for added crunch.

Step 3

Refrigerate the coconut balls until firm and ready to enjoy.
