Delicious Indian Tofu and Tomato Stew

Bursting with the goodness of fresh tomatoes, tofu, and refreshing herbs, this stew is a culinary delight that won't weigh you down even in warm weather. For a hearty meal, pair it with chapati or stovetop naan.

Ingredients

  • 2 tablespoons of coconut oil
  • 3 tablespoons of ground ginger
  • 3 tablespoons of ground cumin
  • 3 tablespoons of ground coriander
  • 1 tablespoon of turmeric
  • 1 chopped onion
  • 2 (14-ounce) packages of firm tofu, drained and cubed
  • 2 (15-ounce) cans of crushed tomatoes
  • 4 cups of spinach leaves
  • 1 (15-ounce) can of coconut milk
  • 1 teaspoon of salt
  • 1 bunch of fresh cilantro leaves, chopped
  • Orange zest for garnish (optional)

Method

Step 1

Heat coconut oil in a large soup pot over medium heat. Add ground ginger, cumin, coriander, and turmeric. Cook for 1 to 2 minutes.

Step 2

Incorporate chopped onion and tofu, stirring to combine with the spices. Cook for 10 minutes.

Step 3

Introduce crushed tomatoes and spinach to the pot, bringing it to a gentle boil.

Step 4

Reduce heat and pour in coconut milk, seasoning with salt. Simmer for 10 to 15 minutes.

Step 5

Garnish the stew with chopped cilantro and optional orange zest before serving.
