A Vata-Friendly Twist on Fried Rice

Indulge in a Vata-friendly twist on fried rice, enriched with the aroma of onions and garlic. While raw greens are typically recommended for Vatas, this recipe ingeniously balances doshas by gently cooking them in oil before incorporating the rice.

Ingredients

  • 3 tablespoons of ghee
  • 1 large onion, finely chopped
  • 5 to 6 cloves of garlic, minced
  • 6 cups of assorted greens
  • 2 cups of leftover wild, red, black, or basmati rice
  • 1 teaspoon of sea salt or kosher salt

Method

Step 1

Heat the ghee in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté until golden brown, approximately 5 minutes.

Step 2

Incorporate the greens into the skillet and sauté for an additional 5 minutes until tender.

Step 3

Introduce the leftover rice into the skillet and cook for 2 to 3 minutes until heated through.

Step 4

Season the dish with salt to taste and serve promptly.

  • Pittas:
